Nougat king Giovanni Verdese, known as Canelin, admired by Luigi Veronelli and Gianfranco Vissani, has been making nougat for more than half a century in Visone, a small village close to Acqui. He personally selects the hazelnuts (only those from Piedmont and local honey) and follows every "cooked" stage step by step. Over the years, Verdese has received certificates and awards, such as the Faccino d'oro of Papillon in 1994, and the international prize Risit d'Aur of casa Nonino in 2002. In his artisan workshop, he also prepares amaretti biscuits, Easter eggs made with chocolate and crumbled nougat and nougat ice cream in summer.
