Lorenzo Bonadeo is one of the best interpreters of Tortona’s tradition for salami: the farm has a complete supply chain with three hundred pigs and one hundred Piedmontese cattle fed on forage, corn and cereals grown on-site, following eco-compatible agronomic techniques. The cured and cooked salami are outstanding and produced with the finest cuts that make them less fatty. At the La Capanna farmhouse, (tel. 0131 875299), you can enjoy bacon, prized cuts of meat and other local specialities.
