PIEDMONT TRADITION JAPANESE STYLE (FEAT. THE FOOD AND WINE ROAD OF GRAN MONFERRATO)

Discover the unique meeting between two great culinary traditions with an exclusive experience: preparation of Piedmont Fassona sushi. At the Regional Wine Shop of Ovada and Monferrato, led by an expert chef, the participants will learn to reinterpret the art of sushi with one of the most prestigious meats in the world, Fassona beef of Piedmont.
During the event, explanation of the cutting, marinating and assembly techniques of the raw meat, transformed into creative rolls. High quality local ingredients will be used, paired with delicate flavors such as flavored rice, fresh vegetables and homemade sauces.
Learn about the history of the Fassona breed, the importance of raw meat in the traditional Piedmont culinary tradition and how this experience unites the elegance of Japan with rural authenticity.
To complete the course, try your own Fassona sushi, accompanied by the local wines.

Arrive at Regional Wine Shop of Ovada. Meet with the chef, welcome coffee and theoretical lesson with introduction to the products used for the Piedmont sushi and lesson on rice preparation.
Followed by practical lesson: 1. Preparation of Rolls
Oro nero (truffle) / Tonnata (ltc and tuna sauce) / Dentro e fuori (onion jam)
Doppia cruda (honey, mustard and castelmagno cheese)
2. General preparation of the fassoncini (Gourmet tartare)
3. Explanations and preparation with cooking of Ravyoza d'alpeggio (Gyoza style with
Fassona meat and served with fondue of toma piemonte and fried onion)

Everyone at the table !!! Lunch with all the products prepared by the participants
including sauces, water coffee and a glass of local wine
