Some dishes in the province of Alessandria are cooked with anchovies?

And yet, as we said in the last issue, there is no more sea in Alessandria. The history which our chefs bring to their culinary culture is highly fascinating and rooted in salt smuggling. The smugglers used anchovies to cover the salt as they climbed the "Salt Road" from Liguria to the Alps, passing by the province of Alessandria.
