Vignale Monferrato


An itinerary in Monferrato of the Infernots, UNESCO heritage sites, to discover the king of the table, his majesty the Truffle. The infernots, underground cellars dug in the local stone called 'pietra da cantoni' are the symbol and identity of this land, where the areas between the hills were "once occupied by sea". The same can be said for truffle hunting and extraction which has been classified as intangible cultural heritage since 2021. In autumn, don't miss out on the multiple fairs and feasts which coincide with the opening of the truffle hunting season with the possibility to enjoy the dishes of the local food and wine tradition.


Our journey starts from Cella Monte one of the most beautiful villages of Italy Walking along the narrow streets of the village, which takes on the appearance of an open-air museum, visitors will notice shells in the walls, positioned there by nature not by man, as this area was covered by sea, and the hills of Monferrato were its archipelagos millions of years ago. Slowly, as the water receded, the sandstone remained, which was used to build the houses, buildings and UNESCO heritage Infernots. These underground rooms dug into the sandstone rock (‘pietra da cantoni’) maintain constant temperature and humidity thanks to the geological characteristics of this area of marine origin, making them ideal for the storage of foods, an annex to the cellars. They are the precious inheritance of the rural tradition, small hidden gems recognised as World heritage sites.

Lunch at leisure.
Arrive at a UNESCO Monferrato winery in the early afternoon and meet with our expert truffle hunter. Since 2021, truffle hunting and extraction has been part of UNESCO's intangible cultural heritage, and here in Monferrato it is an experience to enjoy and remember. Everything is true and authentic; nothing is prepared, and when the loyal ‘tabui’ starts to dig and agitate itself you will hold your breath and tremble with joy. At the end, possible tasting and visit to winery (in some wineries visit the infernot or quarries in pietra da cantoni).

All year except for May and from 1 to 21 September when it is temporarily banned by the Piedmont Regional Autority.

Sportswear-trekking shoes or rubber boots are recommended (if rubber boots are needed they can be provided by the organisation if requested the day before the activity). In the event of bad weather, the activity will be postponed.


The truffles extracted are not included in the experience: they can be purchased directly from the truffle hunter at market price.
